Tasty Tuesday: Canning and Preservation
There's a beauty to seasonality, to slowing down in the fall and letting the quiet of winter months settle in, but it's so hard to say goodbye to our summer veggies.

Turns out, Chef Brandon Byrd of Parker Red refuses to say goodbye and instead says preserve! He has a thing for preservation techniques, so if you're looking for a chef in his sweet spot, this is it.

In this Tasting Tuesday, brought to you by Parker Red and Brooklyn Grange, we'll start with a tour of the farm and a harvest of fresh summer veggies; tomatoes, peppers, herbs, and eggplant are all on the ticket. We'll explore the complex flavor profiles of each vegetable and think about what makes these foods so satisfying and fresh.  What about these flavors is it that you yearn for in wintertime?

Back in the kitchen, Chef Brandon will walk us through three different dishes that preserve eggplant, tomatoes, peppers and herbs. You'll learn how to safely preserve, and how to layer flavors and textures that will deepen and marry until you're ready to open the jar. We'll snack on your culinary creations throughout class and send you home with three preserves of your own.

Breaking open the seal on a jar of arugula pesto, tomato conserva, or preserved eggplant in January will release a scent of summer that hits your memory at its deepest point - transporting you from a chilly gray winter day to the brilliant warmth and sunshine of summer.

It works. It's weird. You'll love it.
