The State of the Plate: Cooking Up Sustainable Choices
THE STATE OF THE PLATE: Cooking Up Sustainable Choices
Sustainable Meat: What it is * What it tastes like * Why buy it * Where to get it
The business of food has changed dramatically in recent years. More choices, faster processes, and cheaper methods of production have made our lives easier but at a cost to the environment, public health, and food quality. We need to rethink food production and find solutions for healthier, safer, more sustainable food.
The State of the Plate - the Midwest's first one-day conference to develop and share best practices, information, and strategies for creating a sustainable food supply in the region. The event is for food producers and distributors as well as chefs, restaurant and hospitality professionals; students, faculty, decision makers, elected officials; and leaders in the field.
Registration is required. Registration, networking and complimentary continental breakfast at 8:00am. Conference runs at Chicago Public Library, Harold Washington Library Center, from 9:00 a.m. - 3:00 p.m. Boxed lunch included at no extra charge. Reception from 3:00 p.m. - 6:30 p.m., across the street at Robert Morris College, 401 S. State Street, 8th floor Institute of Culinary Arts.
A Meaty Agenda - the inaugural State of the Plate will focus on meat. We'll discuss how the marketplace is changing and how public health threats and consumer demand can be the catalysts for changing the way food animals are grown, processed, and distributed.
Visit our website at www.stateoftheplate2010.com for up-to-date information about the event.
Get Your Seat at the Table - This conference can succeed only if we have the entire distribution-and-consumer chain sitting at the table. Concerned about antibiotics in your food? Want to understand what organic, grass-fed, industrial or sustainable really means? Interested in local supply chains? If your business day involves meat in any way, we want you at the table.
